Carbohydrates
Carbohydrates are important constituents of food
and beverage products and include simple sugars,
oligosaccharides, sugar alcohols, and polysaccha-
rides.Sugaranalysis isneeded for thegenerationof
nutritional panels, as both the sugar content and
the total carbohydrate content must be included.
In addition, sugar alcohols are gaining popularity
in dietetic foods, and oftenmust bemonitored in
the presence of other sugars.
Simple sugars include mono- and disaccharides
suchas fructose, glucose, sucrose,maltose, and lac-
tose. In foods and beverages, they provide sweet-
ness, texture, and color development. The per-
ceived sweetness of each sugar is different and is
evaluated on the basis of character, intensity, and
duration. Therefore, the ability to profile the indi-
vidual mono- and disaccharides is important to
food chemists.Methods exist for the quantitation
of individual sugar species, aswell as for thedeter-
minationof total sugar content.
An oligosaccharide is a polymer of 2–10 simple
sugars, includingcompounds suchas lactose,malt-
ose, andmaltotriose.Apolysaccharide isdefinedas
a polymer of greater than 10 simple sugars, which
includes starches and gums. In food systems, they
serveasbulkingagents,emulsifiers, stabilizers, free-
flowing agents, andwater binders. The total starch
content in foods can be determined by enzymati-
callydigesting the starch, followedby thequantita-
tive measurement of the resulting glucose and
maltose.
