Glucosinolates are contained in a number of
edible plants. The consumption of these
compounds is associatedwith a significantly
reduced risk for a variety ofmalignant cancers.
Glucosinolates are precursors of isothiocyanates,
including sulforaphane (4-methylsulfinylbutyl
isothiocyanate), which regulatemammalian
enzymes of xenobioticmetabolism.
