LiquidChromatographicAnalysis of HMF
Liquid chromatography (LC) provides apowerful tool formonitoring
reactionproducts suchasHMF ina variety of foodandbeverage
products. Compared to the traditional spectrophotometricmethods, LC is
amuchmore specific assay and is less susceptible to interferences. A
number of LCprocedures havebeenpublished,

phase separationwithaC18or C8 stationary phaseandwater:methanol
or water:acetonitrileas themobilephase. Inorder tomake the
separation compatiblewithMSdetection, water:methanol with10mM
ammonium formatewas used in thiswork.
Theanalysis of anHMF standard is shown inFigure2, with theLC
conditions given inTable I. Themethod is linear over the rangeof
0.014–213ppm, as shown inFigure3. Several types of fruit juicewere
testedusing thismethod. Agrape juiceassay is shown inFigure4.
There is at least one compound that interfereswith theHMFwhenusing
UVdetectionat 280nm; therefore, some typeof sample treatment will be
needed.
